Winemaking Notes
This signature vineyard of four and a quarter acres was planted in 2001 and represents not only the first Cabernet Sauvignon produced from the Monte Sereno vineyard, but also the very first Cabernet to be bottled at Brassfield Estate Winery.
Primary and secondary fermentations were completed before settling and racking the wine to 45% new oak barrels. 80% of the new oak was Chateau Never barrels, and the balance of 20% was well seasoned Missouri oak. 20 months of barrel age married the oak with the wine, and added some remarkable depth and complexity. Just before bottling, a small amount of Merlot (9%, containing a tiny bit of Cab franc and Petite Verdot) was blended with the Cabernet Sauvignon to soften the finish of this muscular wine.
Tasting Notes
This wine exudes exceptional varietal character, and is a classic example of everything expected in a world class Cabernet Sauvignon. Dark fruits of Blackberry and dried currants predominate while subtle elements of earth, eucalyptus, leather and black olive add to this harmoniously orchestrated feast for the senses. A full robe of silky and structural tannins promise exceptional aging potential, however, the holder of this prize may find it hard to resist enjoying the wine today.
