With a perfumed nose of soft raspberries, cedar, and cherry cola this medium bodied Cabernet is elegant and inviting. It has a wonderfully supple texture leading to a finish which resonates with lively volcanic power amplified by tannin and acidity.
Adjacent to an ancient volcanic cinder cone and nestled into the eastern edge of High Valley our Volcano Ridge Vineyard features steep slopes and bright red soils. Originally planted in 2003 and 2004, the vineyard totals 85 acres and is planted to Cabernet Sauvignon, Syrah, Malbec, Petite Sirah, Mourvèdre, Grenache and Zinfandel. The vineyard ranges from 1900 to 2200 ft. In elevation. The volcanic sands and tephra (small, fused sand pebbles) of the Konocti Series make for excellent drainage. Vines struggle in these soils, and the intensity of that struggle is reflected in the layers of complexity and structure, in the
concentrated fruit, and in the final expression of Volcano Ridge wines.
At Brassfield Estate, our winemaking emphasizes quality and the use of traditional handcrafted techniques, which create wines that have both power and finesse. During harvest we used aerative pump overs and finished with extended maceration with heating of the must. The malolactic fermentation takes place in our caves using native bacteria. The Cabernet was sent to 25% new French oak and 75% neutral oak barrels. The wine was stirred monthly on its lees to achieve body and texture. The wine was fined, but bottled without filtration.
