The 2020 Rose displays mouth-watering aromas of strawberry, grapefruit, and soft notes of lemon zest. Well rounded flavor of citrus and apple. This Rose exhibits a soft and balanced mouthfeel with medium acidity and a textured, creamy finish.
All of the fruit for this wine is grown on the floor of High Valley at 1,800 elevations. Diurnal temperature swings of more than forty degrees are common in the valley, enabling ripeness and the retention of acidity. We pick these Pinot Noir grapes exclusively for rosé, at lower sugar levels, which translates into brighter flavors
and a balanced body.
The grapes are pressed as soon as they arrive
at the winery and then we cold-settle the resulting juice before adding our proprietary yeast and cold-fermenting to dryness. The wine then remains on the lees until it is gently fined and filtered before bottling.
