Our 2021 Serenity White Blend is a powerhouse of richly concentrated pineapple, passionfruit and papaya aromas. The palate is complex and vibrant, with flavors of honeydew melon, sweet golden apple, and a delicate touch of hibiscus blossom. A complementary lift of acid adds balance and length to the finish.
Our home ranch on the westside of the High Valley AVA has been known as
“High Serenity Ranch” for over one hundred years. The blocks planted to this
idyllic site include Pinot Gris, Sauvignon Blanc, Viognier and Gewurztraminer.
Each block is comprised of ancient lakebed and alluvial soils from the surrounding mountain range. The transverse valley winds create some of the coolest sites
in Lake County. The lower temperatures on the valley floor allow for diurnal
temperature swings of more than forty degrees, enhancing flavor development
while the retaining a crisp acidity.
We harvest our grapes early in the morning to ensure peak acidity and freshness
upon arrival to the winery. After gentle pressing, we allowed the juice to cold settle
overnight. The next day we racked the juice off heavy lees and fermented in small
stainless-steel tanks. Sur lie aging with battonage (lees stirring) once a week in
tank creates additional body, texture and viscosity in the wine. Each varietal is
fermented and aged separately before blending to create the optimal flavor and
aroma profile for our white blend. This wine was aged six months, lightly fined and
filtered before bottling for maximum freshness and clarity.
